This particular bowl of noodle soup tasted better and better the longer the red spicy stuff on top mixed in with the creamy miso broth below. The fresh made noodles were cooked perfectly al dente and the kakuni pork was very tender with a little bit of sweetness. I was sweating by the end of it from the heat of the spices, but man, oh man, was it yummy... :hungry:

spicy stuff is always delicious^^

my miso soup always turns out sorta thin and tasteless- maybe i need to use more miso. How much do you use? And do you use anything to make a base stock (broth, dashi, etc.)?

Ramen places always make their stock from scratch & they boil it for almost a whole day before serving, so it's way more flavorful than the ready-made stuff. Regular people like us just don't have that kind of time... If you wanna go hardcore, you've gotta use bones in your stock. :) That's where all the flavor comes from.

hmmm, it might work to cook the stock all day in a slow cooker, then. i wouldn't have to even watch over it or anything.

As far as I know you use dashi stock and then just add miso to your own taste.
At least that's the way I was told to do it. Basically I was just given the miso pot and told: put it in - as much as you like.
But then, that was akamiso, so perhaps shiromiso is a bit different?
