This particular bowl of noodle soup tasted better and better the longer the red spicy stuff on top mixed in with the creamy miso broth below. The fresh made noodles were cooked perfectly al dente and the kakuni pork was very tender with a little bit of sweetness. I was sweating by the end of it from the heat of the spices, but man, oh man, was it yummy...
